There is an amazing street at Tsukishima, Tokyo. At the street, a lot of "Monja-yaki" restaurants stand side by side. Monja-yaki is a unique food, where various food materials are baked on an iron plate, in a liquefied flour dough. Since the binding agent is starch, Monja-yaki is a very light and healthy way to enjoy different vegetables and ingredients. Tsukishima Naka-Dori Street has so many Monja-yaki restaurants that you would be at a loss which restaurant you should enter. However, because there are so many Monja-yaki restaurants, with severe competition, any restaurant would likely serve you a delicious and satisfying Monja-yaki. This time we would like to introduce you the restaurant named "Okame". It's located at the middle of the street. When you enter the restaurant and glance at the menu, you'll also be at a loss of words for a huge selection of materials on the menu. But please make yourself at home and order anything you want to eat. You can add your favorite materials, and you can create your original toppings with Monja-yaki. Mochi (the Japanese rice cake) melts when it is baked and gives the Monja-yaki a nice chewy texture and good volume, so it's highly recommended.

When the materials are served to your table, your cooking time starts. The way of cooking Monja-yaki is quite special. Because the binding agent (the starch water) is too light and watery, you should first bake
only the materials on the iron plate. Then, after the materials are baked a little bit, you have to shape
them like a doughnut, make a hole in the center.
And slowly pour the starch water into the center hole
as it is cooked. After the starch water is baked and become pasty, you should mix everything together
and bake it for a while. When the whole thing is baked, your eating time starts. Eat it with a tiny silver spatula.
As the Okame's Monja-yaki includes a lot of slice of cabbage, it's very healthy. And as the starch water is already seasoned, you need not add additional seasonings.
