"Goma-ae"
(Dishes dressed with sesame sauce)

Japanese traditional recipe called "Goma-ae" is one of the typical side dish. The sesame's flavor matches with fresh vegetables.
There are black and white sesame.
White sesame have more oily and deeper taste than black one.
In Kansai area (West of Japan), one tend to be fond of white sesame but one prefer black one in Kanto and Tohoku area (East and North of Japan).
Japanese

Saya-ingen dressed with sesame sauce (for 4 servings)
200g Saya-ingen (Green Beans), Salt as needed

[Batter]
3 tbsp ground sesame, 1+1/2 tbsp sugar,
1 tbsp soy sauce


1 cup = 200cc / 1tbsp = 15cc / 1 teaspoon = 5cc Ground sesame

RECIPE
1. Mix all ingredients of batter in a bowl. (A)

2. Peel the string of saya-ingen. Put salt in boiled
water and add saya-ingen in it. Cut saya-ingen in half.

3. Add saya-ingen to
(A) and mix them.







Broccoli dressed with sesame sauce (for 4 servings)
450g broccoli, salt as needed

[Batter]
3 tbsp ground sesame, 1+1/2 tbsp sugar,
1 tbsp soy sauce and mirin

RECIPE
1. Mix all ingredients of batter in a bowl. (A)
2. Divide broccoli into small pieces. Put salt in hot water and boil broccoli so as not to soften. Take broccoli out, put in cold water and drain.
3. Dress broccoli with
(A).


Sesame

This time I selected useful "ground sesame" (suri-goma in Japanese) that is sold at grocery store. But you can enjoy sesame's original natural flavor by using fresh sesame itself.
If you use the fresh sesame, please roast carefully in a skillet not to burn, make powdery by using food processor or mortar, and mix with seasoning.
