| "Subuta" (Sweet and Sour Pork) |

One of standard Chinese dishes, Sweet and Sour Pork is called "SUBUTA"
in Japanese, which
is a healthy dish contained full of meat and vegetables.
For those who are living in overseas, to get ingredients easier, I'd like
to introduce a newly "SUBUTA."

| Ingredients (for 4 servings) |
200g boneless pork loin, mushroom as needed, 70g Chinese baby corns,
1 onion, 2 green peppers, potato starch (or corn starch)

[Sauce A]
2 tbsp soy sauce, 1 tbsp Japanese sake, 1 teaspoon sugar, minced garlic,
ginger liquid

[Sauce B]
4 tbsp soy sauce, 4 tbsp sugar, 3 or 4tbsp rice wine vinegar, 1 tbsp sesame oil,
1 tbsp oyster sauce (or ketchup), 1/2 cup soup stock

Recipe
1. Cut green pepper, mushroom, baby corn and onion into bite-sized pieces.
2. Cut pork into bite-sized cube and put in a bowl.
3. Pour sauce [A] in a bowl, mix well and set aside for 30 minutes.
4. Coat pork cube with potato starch.
5. Warm sauce [B] up in a microwave.
1. Heat oil to 180°C and deep-fry pork until became light brown.
2. Stir-fry green pepper, mushroom and onion in a large frying pan.
3. Add fried pork in the pan.
4. Pour sauce [B] in the pan and bring to a boil.
5. Add mixture of water and potato starch in the pan
and stir quickly.

Points
1. The ratio of quantity of starch and water is one to one.
2. To make your favorite thickness, pour the mixture little by little.
3. After adding the mixture, cook quickly.
Chinkiang Vinegar rich in amino acid has an effect on your diet and recovering
from your fatigue. Besides, this vinegar offer you more rich flavor.
If you have this vinegar, please use halves of this vinegar and rice vinegar
of the quantity.
