"Curry and Rice"


Curry and Rice is a very popular in Japan
and we usually call "Curry Rice."
Of course, instant curry roux is useful, but
why don't you try to cook by using hand made
roux?

Ingredients (serving for 4)
200g sliced pork loin, 1 teaspoon curry powder, 1+1/2 onion, 1 carrot,
1 laurel, 1 tbsp grated garlic, 10g grated ginger, 2 tbsp ketchup,
2 tbsp Worcester sauce, 1/2 tbsp sugar, 1/2 tbsp salt,
1 tbsp honey, 1 teaspoon instant coffee

3 cups rice (1cup = 180cc)

<Soup> 4 cup hot water, 2 soup stocks

<Curry Roux> 4 tbsp vegetable oil, 8 tbsp flour, 2+1/2 tbsp curry powder


RECIPE

How to cook rice
Please refer to the recipe "onigiri."

Preparing
1. Cut sliced pork into 2-3cm width and coat with curry powder.

2. Cut onion and carrot into bite-sized.

3. Heat vegetable oil on a pot, cook onion until became softly
and add honey.

4. Add soup, bring to boil up and turn down the heat .
Get rid of harshness.

To add honey is familiar to well-cooked onion taste.


How to cook curry roux

1. Heat vegetable oil in a frying pan, add flour slowly,
stir constantly until well blended.

2. Remove the pan from the heat and put it on a towel
to cool it down.






3. Add curry powder to the pan and mix well.(B)

4. Pour
(A) in (B)slowly. (C)

5. Pour (C) into the pot, add garlic, laurel, ketchup,
Worcester sauce, sugar and salt.

6. Boil well for 30 minutes.

7. Pour instant coffee.

Instant coffee makes more rich taste.




Finish
1. Serve rice on a plate and pour curry sauce over it.
2. If yo like, garnish with pickles.

Mariko's advice
If you would like to thicken the sauce, add the same quantity of paste
made by butter and flour. (Beurre Manié)
To get rid of a spicy taste, please add plain yogurt.
To make more spicy, add 1 teaspoon of
Garam Masala.

Instant Curry Roux

Instant curry roux is also available, but please pay attention
the revel of spicy, which is classified mild, medium and hot.
In case of using instant curry roux, please refer to the process
as follows;

1. Cook all the ingredients and add water.
2. Boil and get rid of harshness.
3. Put instant curry roux.
