"Sekihan" (Rice cooked with Azuki Beans)


We cannot miss a traditional Japanese dish "Sekihan" for celebrations.
Today I'd like to introduce an easy recipe of Sekihan.

Ingredients (for serving 4)
1 cup mochigome (glutinous rice),
20g azuki beans
Mochigome Azuki Beans
[Topping]
Black sesame seeds and salt

Recipe (500W microwave)


1. Wash rice, soak in water for 3 hours or half a day, and drain.

2. Boil azuki beans up at high heat and remove harshness.

3. Turn down the heat and take out 1/2 cup of liquid
(A) after the liquid changed reddish-brown.

4. Put some water twice during boiling azuki beans.
Pinch bean between fingers to test; If bean was mashed, it's OK.

5. Put rice and azuki beans in a container and add
(A) and water to make 3/4 cup of liquid.

6. Cover with film wrap and put into a microwave for 6 minutes.

7. Take the container out, mix rice with azuki beans and cover with film wrap again.

8. Put the container into a microwave and warm for 3 minutes.

9. Serve the rice and sprinkle fixture of salt and black sesame seeds over the rice if you would like
.
